This is a wonderful simple recipe to use for breakfast, lunch or a light supper. Serve with salad, fried mushrooms, or vegetables. I love it. Multiply the ingredients as this recipe only feeds one.
Ingredients
- 2 eggs
- 1 large courgette
- 2-3 tablespoons grated cheddar cheese
Method
Grate the courgette into a bowl…
Grate 2-3 tablespoons of cheddar cheese on top…
Give them a whisk with a fork and season with salt and pepper…
Pour that on top of the courgettes and cheese and mix it all together…
I heated last night chicken fat/macadamia oil in a pan and dropped dollops of the mixture into the oil…
Leave it for a few minutes to brown on the underside. It looks very loose and you may think it will all fall apart, but (to my surprise), when the underside is cooked, you can pick it up and flip it over without it disintegrating (fist pump!)…
I fried a few mushrooms and …voila…
I’ll do that again! They will make 4 medium flapjacks or 2 large.
