Something Fishy…

It’s my plan to be a bit more intentional with my cooking! Instead of poor Mike coming home to an ‘assembled’ meal made up of ready cooked (pretty dry and tasteless) chicken and salad, I’m actually getting a little creative and even (vaguely) following a recipe! I saw a recipe on Low Carb is Lekker and remembered the idea. So yesterday, I went and bought frozen hake…

Raw hake…and got to it.  It’s low carb crumbed fish. Start off with a whisked egg…

EggThen I poured quite a bit of coconut (flakes) into a bowl and added spice…

Veggie spiceThen I took the fish, slopped it into the eggs and rolled it in the coconut mixture, until it was well covered…

Fish batteredThen with a good dollop of coconut oil melted in a non-stick pan, I fried the fish and this was it nearly done…

Nearly doneMike loved it! You can taste the coconut but it’s not overpowering. I served it with lemon and a green salad. 🙂

Yum!

There are some significant changes coming to my life soon. Probably, some time next week, I’ll be able to write about them. In the meantime, as I consider what is to come, it’s very interesting coming to terms with my feelings! When changes come, you need to be prepared. What I can say, for sure, is that God is fully aware of everything we go through. When we are in the centre of His will, He is so close and so reassuring that any insecurity seeps away. I woke up shortly after 2-30am this morning and couldn’t fall asleep again. Eventually, I got up with my alarm at 3-35am and went and made tea and had my quiet time. It made such a difference!

Life is full of ups and downs. Change is inevitable for each one of us. We cannot avoid it. We are growing all the time. Circumstances change. Our health changes. Friends change. People move away. Children grow up and leave home. Life is never static. There’s always some sort of movement going on. It can be quite unsettling but it need not be. We have a solid foundation in Jesus. Being anchored to Him ensures safety and security when the storms of life hit. When change threatens to unsettle us, we have a power within that gives us all we need to carry on and live life abundantly. John 7 vss 37-38

“Jesus stood and said in a loud voice, “If anyone is thirsty let him come to me and drink. Whoever believes in me, as the Scripture has said, streams of living water will flow from within him.”

Tap into the power of Jesus today and let His Holy Spirit refresh you with living water. We can live in strength and contentment because of Him.
