No Dough Pizza

Saturday and my Banting recipe day.

Pizza is one of the things that is hard to give up when Banting. There are some options. I’ve tried pizza bases made with cauliflower, which are a bit to think and lack the crispy texture I prefer for a pizza.

This recipe uses cheese which when heated melts and then crisps and if you get it right, is a great low carb pizza option.

Crust
1 (8 oz) package of full fat cream cheese, room temperature
2 eggs
1/4 tsp ground black pepper
1 tsp garlic powder
1/4 cup grated Parmesan cheese

Topping
1/2 cup pizza sauce
1 1/2 cups shredded mozzarella cheese
Topping of your choice…. ham, sausage, mushrooms, peppers, avo, feta olives, etc.
Garlic powder

Preheat oven to 180C.

Lightly spray a rectangular  baking tray with cooking spray. With a handheld mixer, mix cream cheese, eggs, pepper, garlic powder and Parmesan cheese until combined. Spread into baking dish. Bake for 12-15 minutes, our until golden brown. Allow crust to cool for 10 minutes.

Spread pizza sauce on crust. Top with cheese and toppings. Sprinkle pizza with garlic powder. Bake 8-10 minutes, until cheese is melted.

# 62 of my 1000 thanks is something I said ‘thank you’ for a number of times on Thursday. On Wednesday in Cape Town, I had a really sore left shoulder. I think it was some sort of muscular thing caused by rucksack. I took an anti-inflammatory pill and hoped it would go away. When I woke up Thursday, I only had one capsule left so decided to hang onto it until later in the day when I may need it more. When I got back to my hotel room after the Thursday interviews, I realised I hadn’t noticed the pain. I was so grateful! I ended up bringing my last capsule home. I can still feel a twinge but it’s much better than it was! 🙂

This morning Mike and I had a spat!
