Low Carb on the Cheap – Tuna Muffins

It is true that it can be expensive to follow a low carb lifestyle. It can get a lot cheaper by buying in bulk, cooking and freezing. Cheap low carb, high protein foods such as pilchards, liver & kidneys are widely available. Tim Noakes suggests brains as well, but ‘ugh’ comes to mind! There must be enough cheaper options than eating brains. I googled it and couldn’t find too much good stuff about them.

Eggs must be a staple part of a LC lifestyle and they are really inexpensive considering their return. Do try get free range though. You can stretch meals by adding high protein foods such as chicken to lots of vegetables. Strip chickens to their bones, boil the bones for broth and stock to use later in soup. Those are a few suggestions. I am sure there are more. You can leave yours in the comments so we can all benefit.

Today I found a fabulous little Tuna Muffin recipe which is not that expensive and will go down well with Low Carb bread (although the bread is far more expensive to make). You may want to scrap making the bread and serve this with a large egg salad and avocado pear. That will make a great combination.

TUNA OR SALMON MUFFINS

2 cans tuna or salmon, drained well
2 eggs
1/4 cup celery, chopped fine,
1/2 onion, chopped fine,
1/4 cup green pepper, minced,
1/2 cup cheddar cheese, grated (more if you prefer)
Salt and pepper, to taste

Mix all of the ingredients and spoon into 6 well-greased muffin cups. Bake at 180ºC for 30 minutes until puffed, set and lightly browned around the edges.

Makes 6 servings
Can be frozen

Per Serving: 109 Calories; 8g Fat; 12g Protein; 1g Carbohydrate; trace Dietary Fiber; 1g Net Carbs

 Low Carb Bread  (from Ingrid Kilgour)

This has been tried and tested and works very well. Thanks Ingrid and Jo

2 cups almond flour (I just used plain ground almonds)
2 cups coconut
1/3 cup almond butter
2 TBs coconut oil (15ml)
4 eggs
2 tsp bicarb (I used 2 tsp baking powder instead as I was adding sunflower seeds and they can go green with bicarb).  You can use either on.

1/2 tsp salt
2 TBs honey
1 cup seeds (any mixture sunflower, sesame, linseed, pumpkin etc)
Mix,
Bake in a lined loaf tin  at 180 C for about 40 mins
Allow to cool completely

Low carb bread

I have been hanging out with Granny a bit more. She is moving into frail care this weekend, (from the Alzheimer unit which is where she has been). She is basically bed ridden now.  Her false teeth don’t fit in her mouth and she cannot speak. She sleeps most of the time. But what is interesting is her response when I read the Bible to her. She pays attention and watches my mouth as I read. She cannot eat bread, but the Word of God feeds her soul. I understand now –

Jesus answered, “It is written: ‘Man shall not live on bread alone, but on every word that comes from the mouth of God.'”

Matthew 4:4.

She is in the ‘departure lounge’ of life. I don’t know how long it will be before she goes to heaven. But she is ready. Jesus will meet her there. Her husband is there. Her beloved sister, Helen is there.  It will be a great blessing for her to leave her broken body and her fragile mind and press the ‘restart’ button in eternal life. 🙂  What a joy that will be for her. It will be bitter-sweet for us. Never forget, it’s not about here and now. There is much, MUCH more to come!
