Banting Pinwheels

This is a fabulous little treat, ideal for breakfast, lunch, afternoon snack, starter or light dinner. For special occasions or family times, it will be a real hit. This came straight from Riana, who not only made them, but also took the photos. Thanks Riana! 🙂

Ingredients

  • Eggs
  • Chives
  • Salmon or Trout – thin ribbons
  • Cream cheese
  • Basil
  • Avocado

IngredientsMethod

  • Beat eggs using one per person.
  • Add 1-2 teaspoons of chives
  • Pour a  layer of egg mixture into a frying pan, thinly covering the bottom

Small flat omeletDon’t flip the pancake. Rather cover the the pan and cook on low until done. Then carefully lift it or slip it onto a plate. Layer the filling on in a central line across the pancake, starting with the salmon or trout ribbons. Slice the cheese and put that next, followed by the basil…

End up with slices of avocado. This is how we did it, but to be honest, this is YOUR Banting Pinwheel, so use whatever ingredients you choose, in whatever order you prefer!

top with avocadoFlip one side of the egg over the filling and roll like a pancake. Then slice about into about one inch pieces and turn them onto the flat side. They will look like this…

Gratitude Pic…We spent a really lovely 24 hours in Swellendam with Adrian and Stacey. Mike also snuck in 18 holes of golf. I caddied and was so glad Mike had an umbrella with him. It did a great job in keeping the sun off me and made the world of difference…just need to get a more reflective one…
