Stacey (my daughter) sent me this one. She experimented with it and it turned out well, so I attempted it as well and it is delicious!
There are 4 ingredients. Short story: Blend 1 x 400ml tin coconut cream, with 40-50g cocoa powder, 75g xylitol and half a teaspoon of vanilla essence.
Stacey roughly estimated 1 tin of coconut cream to 1 quarter xylitol and 1 quarter cocoa powder. Add half a teaspoon of vanilla essence. When I was making it, I put in 1 tin of coconut cream….
….and 50g of cocoa. I put that into the coconut milk…
….and gave it a good blend with my stick blender….
Half way through I popped in the vanilla essence. You can taste it before freezing to see if it suits your taste buds. Next time, I think I will make it with a little less cocoa. It was very chocolately with 50g of cocoa, so perhaps 40g is better.
Once well blended, all that is left to do is to pour it into containers…
And it’s ready for the freezer…
It freezes well. It is delicious. The men in my family view this Banting thing with a great deal of suspicion. Having never been a great cook, they don’t seem to have a lot of confidence in my experiments 😉 but this ice cream was a winner. As we seldom have anything sweet in the house, they were prepared to try chocolate ice cream and gingerly had a teaspoon. Great nods of approval followed! Big thumbs up!
Stacey added coffee for a nice difference.
