Avocado and Bacon Salad

When Adrian and Stacey visited recently they bought with them an avocado and bacon salad of note. They add a lot of greens to it and put in cheese as well. Altogether it is filling, scrumptious and low carb. The trick to what they do  is regularly they will have it for breakfast. The both have lost significant weight on a low carb diet and are both feeling so much better for it. This avo and bacon salad is an alternative.

I saw this recipe in a magazine, but didn’t have all their suggested ingredients so I adapted it and it turned out pretty darn good!

I used 250g bacon, chopped and fried in butter until cooked. I turned the heat off and  added about a quarter of a cup of garlic wine vinegar as well as olive oil to the bacon. I didn’t measure – I just estimated. Then I added avocado pears which I had quartered….and let it marinate a bit

# 101 of my 1000 thanks is my breakfast ritual. Mike and I will meet at about 10am, me arriving from my study and him arriving from his (both under the same roof of our house). He will have a cooked breakfast of eggs, tomatoes, banana and toast (he’s not Banting). I will pick lettuce/kale leaves from my veggies growing in pots outside and add to it avo and cheese, seasoned with salt and pepper and drizzled with olive oil. We both sit down to eat. It’s such a comforting little routine. We both get what we want so we are both happy.

Banting can be very divisive – and when you live with family who don’t see the point of it, it’s best to find your own comfortable way together. I started a lower carb, less sugar way of life about 5 years ago. To be honest, I have not lost any weight – but the less sugar way of life is certainly a lot healthier.
