Stacey’s Yummy Low Carb Teatime Treat

Last night Stacey went to buy low carb stuff! She bought ground almonds and came home and this morning she made a dozen of these:MuffinOkay, so it is a bit too carbish – 20g carbs, 20g fat and 10g protein.

I had one before gym.

Here is the recipe….

Mix together 200g almond flour, 1/2 cup sugar substitute (xylitol), 1/2 cocoa and 1 teaspoon baking powder.

Beat together 4 eggs, 1/2 cup plain full fat yoghurt and 125g melted butter.

Blend the dry with the wet ingredients. Spoon into a muffin tray and bake for 20 minutes at 180 degrees. Makes 12.

Stacey iced them using 100g creamed cheese, 65g butter mixed with a quarter of a cup of xylitol & a 5ml vanilla essence- this allows for liberal icing.

Warning! They are expensive to make!!! For special occasions, like homecomings! 🙂
