Savoury Banting ‘Biscones” – Cross Between a Biscuit & a Scone

I went for tea at a friend’s house yesterday.   Riana bought a plate of what was a cross between  biscuits & cheese scones (I’m calling them biscones). Karin made chocolate cake.  Karin still has to send me the choc cake recipe, so that will come in the future, but Riana sent me the biscone recipe.

Riana doubled the recipe to make a dozen. She got them perfect. They are not as thick as a scone, which is why they are referred to as biscuits. If you played around with the recipe a bit, you may be able to make these as buns for hamburgers.

Ingredients

  • 3 eggs
  • 1/3 cup of coconut flour
  • 6 oz (170g)  sharp cheddar cheese-
  • 1/3 cup butter, melted (1 tablespoon reserved for brushing after)
  • 1 teaspoon of garlic powder (or if you don’t have, you can use Ina Paarman chicken stock)
  • 1 teaspoon of chopped green onion
  • 1/4 teaspoon baking powder
  • pinch of salt and pepper

Instructions

  1. Preheat oven to 200C
  2. In a mixing bowl, combine coconut flour, baking powder, garlic powder, salt and pepper.
  3. In a separate bowl, whisk together eggs and butter until evenly distributed.
  4. Slowly incorporate the wet ingredients into the dry and mix until there are no lumps.
  5. Fold in the cheese and green onion.
  6. Drop spoonfuls of the batter onto a greased cookie sheet.
  7. Bake for about 13 minutes until the edges of the biscuits are brown and the tops are golden.
  8. Brush top with additional melted butter out of the oven.
  9. Cool for at least a half hour. These will get even more dense if they are left on the counter for a couple of hours.

Easy to make and scrumptious to eat. It’s another one to save!
