Orange Sweet Potato & Butternut Soup…

It’s certainly a day for it. Cool and drizzly. Yesterday I found ORANGE sweet potatoes back on the supermarket shelf so I picked up two medium sized ones and a largish butternut and waited for a suitable rainy day to make it. I don’t know what it is with the orange sweet potatoes. They seem to add a slightly different, very nice flavour.

I peeled…

& diced….

and stir fried before adding water and the secret ingredient…

….and now it’s bubbling away…

After it’s well cooked and mushy, I’ll get out the stick blender and blend it until smooth & serve it garnished with feta cheese and parsley.

YUM. I mentioned this recipe on air the other week and had a number of people comment on it. I’ve probably blogged about it before. It’s so easy and a sure winner.

Today went well. The show was good. I prepared Thursday’s music and just have programme notes to complete for tomorrow.

The Bible verse that jumped out at me in my Bible reading this morning was Acts 3:19 which says:

“Repent, then, and turn to God so that your sins may be wiped out, that times of refreshing may come from the Lord.”

Great advantages to repentance. Have your sins wiped out and times of refreshing from the Lord. Don’t hesitate!
