Flour Free Pancakes

My friend Melanie shared this recipe on her FB wall & it’s absolutely worth a try. My only misgiving is that it uses a banana. The humble banana is actually far higher in carbs than you want to know! 100g banana has 23g of carbs, including 12g sugar (that’s like 2 and a half teaspoons), so don’t rush to eat a banana if you are avoiding carbs.  Just note that the average banana weighs 126g, so that’s about 29g of carbs and 15g sugar (3 teaspoons!). With this recipe, you can make about 6 small pancakes (more flapjacks really), so you are looking at 5g of carbs per flapjack,  including about 2.5g of sugar (half a teaspoon). 5g sounds fine, along as you only have 1, but the recipe calls for only two eggs. Don’t be tempted to wolf the whole batch back! Read onto below the picture and recipe, because I’ve looked at other options…

Natural banana pancakes

Recipe:-

– 1 ripe banana (which is probably a bit sweeter than firm)
– 2 whole eggs

That’s it. Just mix together in a bowl and make sure the banana is all mashed. Then spray your pan with some “spray & cook” or coconut oil. On a low to medium heat, scoop some of the batter into the pan & give it about 20-30 sec, flip, and done! Serve and eat!

*Some advice would be to make them small so its easier to flip

Now! If you substitute the banana with strawberries, you reduce the carb content to only 9.5g from  the fruit instead of 29g! That’s a 20g difference. It’s worth experimenting with. Bananas are far more bulkier than strawberries, so you may have to play around a bit. I’ll give it a try. At 9.5g of carbs in the batch, you have the latitude to eat the whole lot! The cooking gurus can give it a go and let us know!

But one thing this does do is show you how high in sugar/carbs bananas are. Make berries your fruit of choice – they have less carbs.

Now from food to eat, to food for thought! I have devoured Psalm 91 and I found the final three verses to be both powerful and personal. I read them to Mike substituting his name in appropriate places. So here’s an exercise for you today…

Put your name in the blank spaces and read the verses out loud. You will be so encouraged at God’s love and care for you. Or  perhaps you know someone who needs encouragement. Email it to them, filling in their name…

“Because _________ has loved Me, therefore I will deliver _________ ; I will set _________ securely on high, because _________ has known My name. “_________ will call upon Me, and I will answer _________ ; I will be with _________ in trouble; I will rescue _________ and honor _________ . “With a long life I will satisfy _________ And let _________ see My salvation.”

(Psalm 91:14-16).  Love God, acknowledge His Name & He will do this for you. In fact it’s worth printing out and putting on your fridge!
