Fat vss Fat. We have been raised on ‘bad fats’. I remember years ago making chicken curry and finding myself feeling guilty for putting coconut cream in it. Loaded with saturated fat (74g per cup), I was led to believe it was going to clog arteries and cause heart disease. A tiny part of me wondered why a natural plant fat could be so bad. When you know better, you do better. Now we are beginning to know better.
In all of these things, two things come to mind. One is to try and figure out the ‘Biblical view’ if there is one and the other is to find the balance. I am reading through the book of Acts at the moment and have just got to Acts 11 where Peter has a vision of a tablecloth laden with (previously) forbidden food. (Sounds familiar?) God tells him to “kill and eat.” Peter is horrified. He responds “Surely not, Lord! Nothing impure or unclean has ever entered my mouth.” God replies, “Do not call anything impure that God has made clean.” (Acts 11:5-10).
And so it became more of a common practice for previously forbidden food such as pork to be eaten. As far as food for today is concerned, it needs to be borne in mind that the industrial process of growing and getting to market involves more chemical enhancement of fruit and veggies. That results, I am told, in a fraction of the nutritional value than years gone buy. The hormone treatment of chickens and beef is known to have some negative consequences, so the drive for organic produce is on the up! Makes me see a veggie garden in my future. It’s time. We have the space and I have a little more time, so once the house is sorted, that can become a very useful project for the spring.
Finding the balance of the food we eat has to start with cutting sugar and carbs, while maintaining some enjoyment of life. I, like many of you reading this, fall of the wagon when it comes to being a carbless purist. Weekends and special occasions and I will be first to stumble at the temptation of sweet treats that usually can’t be found in my kitchen. But now that I have been eating carbless, I have to admit that when I do have a carb-laden weekend, my stomach sure doesn’t approve. And so I say to you (and me) who had a sweetened long weekend, it’s time to jump back on the wagon and get on with the good stuff.
Our NZ guests arrived and after scrubbing the cottage from top to tail, it won’t have to be done again for a while! I was happy with the final partially refurbished results…

I didn’t take a photo of the bathroom for some reason! I was happy. I sent the photos to my interior design consultant, Riana and she approved. If she likes any of it, she can take credit as her skills have clearly brushed off on me! Thanks my friend (and thanks again for the table cloth!!)

Gratitude Pic…when I was 14, I stayed back a year in school. Due to that little ‘scenic route’, I ended up doing 2 terms of typing. I did a little typing test today. If it had not been for my falling back a year, I wouldn’t have this amazing skill that I use every single day! To God be the glory…
