Egg Recipes…& A BIG Cell Phone Delivery!

I eat eggs almost everyday and sometimes it would be nice to do something different. This morning, I beat my eggs, put in a dollop of mayonnaise and some feta with a splash of cream and a dash of milk. I microwaved it on high for 1 minute before tossing in a few sliced mushrooms and a few chopped bits of red pepper…another minute in the microwave and voila…2 minute microwave omelette…

2 min microwave omeletIt really is as simple as that. The other day I had some left over broccoli and so I tossed that in for the 2nd minute with half a round of feta cheese…it tasted like quiche. It was so so nice! Those are my informal, spur of the moment egg variations.

But if you google ‘egg recipes’ more than 84 million results come up, so no shortage of options!

Eggs in Ham Cups means you get a muffin pan and after greasing it with butter, you line each cup with a generous piece of ham. Into the ham you break an egg and into an oven preheated to 190C it goes for 15 minutes or until the egg is cooked. You can garnish it with spring onions if you like. Another option is to beat the egg beforehand and add a bit of bacon or tomato before baking it. It turns out like this…

Ham and eggsIf you have a bit more time, you may want to make a fritatta. For this you can be imaginative and add leftovers. It’s scrumptious and low carb. Out the Cape Argus 25th April 2013, comes the following recipe:

Serves 4

30g butter, 30ml olive oil, 250g mushrooms, 1 red pepper sliced into strips, 1 red onion, halved and sliced, 5ml crushed garlic, 4 extra large (free range) eggs, 100ml cream, 100ml grated Parmesan, 50ml finely chopped parsley, salt and pepper.

Heat butter and oil over medium heat in an oven proof frying pan. Fry mushrooms, red pepper, onion and garlic (you can throw in spinach if you want to as well) for 4-5 minutes. In a separate bowl, combine the eggs, cream, Parmesan and parsley. Whisk well. Season to taste. Pour the egg mixture over the mushroom and peppers. Cook on the stove top over a low heat for 5 minutes until it bubbles. Then place the pan under the grill for 2-3 minutes until golden brown. Voila!

FrittataIt looks like a crust-less quiche. Very nice! Worth a try.

Apart from the eggs, there is some exciting news in the van Niekerk house today. Mike’s new cell phone has arrived!  Remember his cell phone was stolen. Insurance paid out about 1/4 of his stolen one. We have replaced it by buying (online) from the Orange Store, the eye-popping, Samsung Galaxy MEGA! It is sitting downstairs on the dining room table…

Adrian, Stacey and I all went to see Granny yesterday. She was a little alert and responded to the cross-stitch that Stacey is working on. One day at a time.
