The day, my friend Jo mentioned she had seen a recipe on Facebook and went onto describe it. With her brief explanation in my mind, I bought chicken fillets and went home to give it a try. (Thanks Jo!)
What I did, is slice chicken fillets length-ways and line a pie dish with them…this should feed 4, unless you are really hungry and then it will feed only 2!
I then half emptied a packet of Ina Paarman pesto over them. You can keep the balance for another day.
The idea is that it turns out a bit pizza-ish, so I layered tomatoes on top of the chicken and seasoned it with salt and pepper.
- Here’s a note to self and to you…don’t use as much tomato as I did. It is very watery and after cooking, there was a lot of liquid. If you want a tomato flavour, perhaps use half the tomato and a thin layer of tomato paste.
I had mushrooms, so those went on as well.
Choose any pizza topping of your choice – it will go well with ham or Chorizo sausage or olives. If you are going to add avo, put it on after cooking.
Cheese on top….
Into the oven for about 30 to 40 minutes. The chicken must be cooked and the top nice and brown…
It was very yummy!
