Chicken Pesto Fillets With Pizza Toppings

The day, my friend Jo mentioned she had seen a recipe on Facebook and went onto describe it. With her brief explanation in my mind, I bought chicken fillets and went home to give it a try. (Thanks Jo!)

What I did, is slice chicken fillets length-ways and line a pie dish with them…this should feed 4, unless you are really hungry and then it will feed only 2!

I then half emptied a packet of Ina Paarman pesto over them. You can keep the balance for another day.

The idea is that it turns out a bit pizza-ish, so I layered tomatoes on top of the chicken and seasoned it with salt and pepper.

  • Here’s a note to self and to you…don’t use as much tomato as I did. It is very watery and after cooking, there was a lot of liquid. If you want a tomato flavour, perhaps use half the tomato and a thin layer of tomato paste.

I had mushrooms, so those went on as well.

Choose any pizza topping of your choice – it will go well with ham or Chorizo sausage or olives. If you are going to add avo, put it on after cooking.
