Banting Summer Shakes

These cold chocolate and berry milkshakes will be welcome on a hot summer’s day.

Banting milkshakes are a great way to treat yourself and get some additional healthy fat into your diet.

Ingredients

  • Coconut cream x 200ml
  • Full cream milk x 100ml
  • Knob of butter
  • Xylitol to sweeten (optional)
  • 4 squares of 85% dark chocolate or 1-2 teaspoons of organic cocoa
  • 50ml of cream

IngredientsThe way you put this together is really up to you. It’s a matter of taste.

I combined 200ml coconut cream with 1ooml full cream milk & 50ml cream

Butter with choc and milkAnd using a stick blender,  I blitzed it. Pouring it into a glass, I found it easily would make two. Served with grated chocolate…

Chocolate milkshakeIt was yum! The next day, I used the balance of the coconut cream and made a strawberry one…the berries were frozen, so I microwaved them for a minute…
