Sometimes it’s nice to have a few snacks to nibble on when everyone else is chomping chips or popcorn. Here’s a little idea for Banting snacks.
The next time you use a sweet potato, save the skins…making sure they are clean..
I like to use Macadamia nut oil to stir fry at the smoking point is higher…
Stir fry the skins…and once nicely browned and crisping, add shreds of coconut..
The coconut will brown quickly…add a little salt..
A really tasty little snack. You know where it comes from and what exactly it’s made of, what seasoning is on it and in which oil it’s cooked.
