Stuffed Baby Marrows – Easy Dinner

Blog reader Gwen from Botswana has sent me a number of Banting recipes and this is one I tried out with great success! It’s just so easy.

Ingredients

  • Baby marrows
  • Onions, red and green peppers and any other vegetables of your choice
  • Tin of tomato, onion and garlic
  • Cheddar cheese grated
  • Feta cheese

Method

It will work well with a decent size marrow and use one per person. I couldn’t find big baby marrows, so used the regular courgettes.

CourgettesStart by cutting them in half long ways…

Cut courgettes in halfThen, using a sharp knife, carefully slice out the flesh in the middle…

Scoop out the fleshPut the inner flesh to one size and line the courgettes in an oven proof dish…

Line courgettes in an oven proof dishRoughly chop the marrow flesh and add it to any other vegetables of your choice. I  mainly used onion, peppers, which you want to stir fry until the onions are transparent…

Stir fry veggiesThen add some beef/ostrich mince….

Add minceAnd brown that until all the pink has gone.

Add a tin of tomato, onion and garlic mix…

Tomato onion garlicGive it a good mix, then season with salt and pepper…

Mix in tomato and cook for a little longerSpoon the mixture over the marrow halves…

Cover courgettes with minceSprinkle grated cheddar cheese over the top as well as a little crumbled feta…Cover with grated cheese and a bit of feta…and it’s ready for the oven. You want to bake it in an oven preheated to 180C for 20 minutes. The cheese must be lovely and melted and the marrows tender….

Grill until cheese has meltedDinner is served!

Just a different way to use mince!
