Low Carb Carrot Cake…YUM!

The Ladies Bible study I attend re-opened today, after the school break. I have to say, Ladies, if you don’t attend one, you should try and start one.  This is for Ladies only! In this safe environment, you can talk, share, eat cake, cry, drink coffee, pray, watch a DVD by a well known speaker and go away feeling refreshed and strengthened. Girls rock!  We talk about marriage and children and health and hormones and just life in general. It’s great therapy. Here’s me in front of the fire…

Rianas delicious carrot cakeI had a taste and it is delicious! Riana’s  recipe is top secret and one day will win her a cooking competition, so for the sake of this blog, I had to turn to the internet.

Cake:

3 Eggs
1,3 Cups of Almond Flour
1/2  cup of Greek Yogurt (Or similar. Always pick the one with most fat)
2 Tsp of Cinnamon
1/2 Tsp Ground Ginger
1 Tsp of Vanilla essence
1,5 Tsp of Baking Powder
1 Cup  of Shredded Carrots (I use 2)
2 Tbsp of Melted Butter
1/4 Tsp of Stevia (Natural Sweetner)

Icing:

200 g of Cream Cheese
50 g  of Soft Butter
1 Tsp of Lime Juice
1/2 Tsp of Stevia

Put oven on 175 ° C. Mix all ingredients in a bowl, except for the butter. Melt butter and pour into the mixture at the end. Stir.

Put a baking sheet in the bottom of a cake pan. Stick in the oven for 25 mins (or until surface is solid). Let it cool off.

Make the icing: Mix all ingredients together in a bowl. Put in the fridge until the cake has cooled off. Then spread the frosting across the top of the cake. Enjoy!

It sounds fantastic. Maybe one rare day, I may even try making it!

This morning I read the last chapter of 1 Chronicles. King David is commissioning his son, Solomon, in making the Temple. One verse that jumped out at me it was so thick with wisdom was verse 9

“Acknowledge the God of your father and serve Him with whole-hearted devotion and with a willing mind, for the Lord searches every heart and understands every motive behind the thoughts.”

(1 Chronicles 28:9)

When you need God, He is there, but when you feel you don’t need/want God, He is there! You can run, but you can’t hide, even in your thinking! God misses nothing. This is good and bad. It’s good when your motives and thoughts and actions are all good. It’s bad when your hidden motives, unseen thoughts or secret actions are not great. God sees them all! Makes you think!
