Change is inevitable. It was Winston Churchill who said something like, “take change by the hand or else it will jump up and grab you by the throat!” Whether change is easy or not, it always comes with adjustment. As I look at the changes that have gradually occurred over the last year, there have been several of them. A year ago, we had just moved Granny into the Ladies Christian Home and were busy visiting her as often as we could. Adrian and Stacey were still overseas and we were looking forward to them returning in August. David had moved out a few months previously and Mike & I found ourselves with an empty nest. The house was quiet and responsibilities were a little less too. The education of our children was over and that was satisfying.
I’m thinking a lot about change right now. I go back to work tomorrow after the Easter break and work the rest of the week, including Thursday. More change is in the pipeline, but I’ll get to that once I know more!

I had the top option with 2 poached eggs on aubergines accompanied by mushrooms and a little yoghurt on the side. I also had a pork sausage as an extra…
It was very nice, but I have a sneaky suspicion the yoghurt was low fat and therefore was sweetened. Tch! If they are going to the trouble of doing it, they must be sure to get it right! I was persuaded to not make a fuss! I enjoyed it none-the less! 🙂
Today has been a very slack day. I had breakfast out and then met Riana for tea and a catch-up. I came home and have got an Ostrich goulash simmering in the slow cooker. It will be deliciously tender by dinner time. There are many options to flavouring ostrich. Simply adding tomatoes is one way. Another is adding ginger and cinnamon or making a curry. Serving it with yoghurt and sour cream seems a popular option as well. I also saw a recipe using coconut milk. I’ll have to check my cupboard to see what I have before deciding! I’ll gooi something in and hopefully it will work! 😉
Talking of Ostriches, do you know they are mentioned in the Bible. In the book of  Job 39:13, we read,
“The wings of the ostrich flap joyfully, though they cannot compare with the wings and feathers of the stork.”
It’s a ‘comparison’ verse, and comes amidst a whole lot of other comparisons of animals one with another. The ostrich is different to the stork. His wings may be stronger than that of the stork, but she has other gifts that suit her needs. And so it is with each of us. Comparison is toxic. Don’t compare yourself to others. God has made you for a purpose that is unique to you. No one else can be you. You can reach people and do things that I can’t do. I can reach people and do things that you can’t do. We all fit into a world, where we are all needed and valued. So go out today and be YOU and enjoy it!
