With avocados back in season, you may be interested in trying this Avocado bread. I haven’t tried it myself, but it looks pretty easy:
1/2 c Coconut Flour
1 t Salt
1 t Baking Soda
1/2 c Ground Flax
6 Eggs
1 c Avocado Puree (about 2 large avocados)
INSTRUCTIONS
Make sure your avocado puree is totally smooth…no lumps!
Combine the dry ingredients. The add your eggs and avocado, beating until smooth. Pour batter into a greased loaf pan. Bake at 350 degrees (180C) for 45-55 minutes, or until a toothpick inserted in the centre comes out clean.
