WINTER! Roast Cauliflower Soup

I have been making Butternut and Sweet Potato soup every winter for years. I’ve already made it a few times this season and frankly, I need a change. I spotted a roast cauliflower soup recipe the other day and thought ‘aha, that looks good!’ It will be a great change for a cold, wintery weekend.

Cold weather todayWith a serious cold front, the soup and the curry both sounded good. I went through a number of other online recipes. (Google Curry Cauliflower soup and you get more than 3 million results!).CauliflowerEventually, I have decided on a simplified recipe:

Here’s how it goes: spread the florets of a head of cauliflower over a baking tray, dot butter or coconut oil over them and roast them for 15 to 20 minutes – they must be tender. Coconut milkWhile that’s happening, saute an onion, 2 cloves of garlic and 2 chopped celery stalks. (I actually forgot the celery). Add a tin of coconut milk and season with some vegetable or chicken stock. I used just under a tablespoon. Simmer for about 5 minutes. Add the roasted cauliflower florets to the mixture .

Soup on the stoveI added a little tumeric to add a bit of colour. Then I used my stick blender…

Blended soupIf you want to use curry, heat a bit of butter in a clean pan and add 2 teaspoons of curry powder, half a teaspoon of tumeric and a teaspoon of cumin. Heat until the aroma is released. Then (and this is a clever trick), after allowing it to cool, mix in 2 tablespoons of cottage cheese until well blended and put it to one side.

For an added twist, you may want to serve this with Parmesan crisps: here’s how:

Take a baking tray and line it with baking paper. (Make sure you use baking paper – I used tin foil and it was a mission!) Put heaps of grated Parmesan onto the paper and spread it into round discs of grated cheese. Put it under the grill. YOU MUST WATCH IT! The cheese will melt, bubble and turn a golden colour. Take it out and carefully remove the discs from the paper.

Parmesan cheeseServe the soup with a dollop of curry creme on top and the Parmesan crisps on the side. Make the Parmesan crisps just before serving because if you make them earlier, they will either lose their crispiness or lose their life and get eaten.

I modified this  Banting friendly soup recipe from a suggested one that appeared on News24.com/food24 – they in turn had got it from Anina’s Recipes.

The soup was really good. We’ll have it tonight! Win!
