Helga’s Breakfast Courgette and Cheese Flapjacks

This afternoon family arrive for 6 nights. David is doing the airport run and I am doing a quick run around the house, cleaning up (again) and planning dinner. The main event of the day was what I decided to have for breakfast. I had bought three large courgettes. I used two of them in last night’s dinner and this morning, I had plans in my head to use the final. This was a grand experiment, which amazingly, was very successful!

Ingredients

  • 2 eggs
  • 1 large courgette
  • 2-3 tablespoons grated cheddar cheese

Method

Grate the courgette into a bowl…

1 large courgette gratedGrate 2-3 tablespoons of cheddar cheese on top…

2-3 tablespoons grated cheeseBreak 2 eggs into a bowl…

2 eggs broken into a bowlGive them a whisk with a fork and season with salt and pepper…

Beat eggs and add salt and pepperPour that on top of the courgettes and cheese and mix it all together…

Add egg to courgettes and cheeseI heated last night chicken fat/macadamia oil in a pan and dropped dollops of the mixture into the oil…

Dollops of the mixture in the panLeave it for a few minutes to brown on the underside. It looks very loose and you may think it will all fall apart, but (to my surprise), when the underside is cooked, you can pick it up and flip it over without it disintegrating (fist pump!)…

Flipping is easy - flapjack stays wholeOver it goes…sizzle sizzle…

In the pan flippedI fried a few mushrooms and …voila…

Courgette and cheese flapjacksThey were really good…

Half flapjack on a forkI’ll do that again! They will make 4 medium flapjacks or 2 large.
