Have This For Breakfast – Coconut Porridge

I saw a recipe link on Facebook the other day and it hit the spot with what I have been feeling like for breakfast. I needed a change from eggs, but I needed one that would fill me up and sustain me longer than an hour! This came from www.bantingwarehouse.com and with a slight modification to suit my taste, it’s a winner.

It’s very easy, especially since I took out the xylitol suggested in the original recipe.

I made it with a third of cup of dessicated coconut, a third cup of cream and a knob of butter. Sprinkle cinnamon on top.

You can make it with more or less. In fact the recipe suggested a quarter cup of each.

One third cream (you can substitute coconut cream if you want dairy free or you could try it with half milk/half cream if you feel it’s too rich)…

In a bowl mix coconut and cream and butterDalene from Banting Warehouse suggest microwaving for 45 seconds on high. That is all you need. 30 seconds may do it. Go shorter rather than longer. Coconut is easy to burn.

It comes out delicious and creamy – sprinkle with cinnamon…

The final product - Coconut porrigeAnd you’re good to go! It’s filling and if you like coconut, it’s delicious. I tried it with xylitol and it was way too sweet for me. If you are truly off sugar, you will not need to add sweetener. The coconut is sweet enough.

It’s a great low carb porridge option for cold wintry mornings – dessert for breakfast!
