Avocado Bread

With avocados back in season, you may be interested in trying this Avocado bread. I found it this week and intended to make it but never got around to it. It uses coconut flour which is less expensive than almond flour.  If you do make it before I do, please work out the cost and let me know! 🙂

INGREDIENTS

1/2 c Coconut Flour
1 t Salt
1 t Baking Soda
1/2 c Ground Flax (take flax seed and grind it using a mincer or coffee grinder)
6 Eggs
1 c Avocado Puree (about 2 large avocados)

INSTRUCTIONS

Make sure your avocado puree is totally smooth…no lumps!
Combine the dry ingredients. The add your eggs and avocado, beating until smooth. Pour batter into a greased loaf pan. Bake at 350 degrees (180C) for 45-55 minutes, or until a toothpick inserted in the centre comes out clean.
