Tuna & Bean Salad

This is my favourite salad for lunch: 

Tuna and Bean Salad.  

It’s adapted from a wheat-free recipe book.

Ingredients: whatever I have available of the following: lettuce, tin of four bean mix (does me two meals), tomato, cucumber, avo, onion flakes, tuna (I use 1/2 tin per meal), beetroot, parsley, mushrooms, goat cheese. 

The original recipe says this should serve four + people, and adds an olive oil dressing.
