Best Stir-Fry Ever

Twice this last week, I’ve whipped up a stir fry that has been an absolute hit with Mike. Getting it right once, is a fluke. Getting it right twice means it’s easy! So here we go…I cheated by buying a ‘ready to use’ coleslaw mix which is less expensive than the pack of stir-fry veg….

Coleslaw mixI chopped up some other veggies, including cauliflower, celery and baby marrows…

Cauliflower celery and baby marrowI also had a few bits of left over peppers – red and yellow – in the fridge, so those got diced and the whole lot was thrown into a pan with a good dob of butter…

Stir friedIn a separate pan, I cooked sliced chicken fillets and once they were done, I added mushrooms…

Cooking mushroom and chickenOnce they were all cooked, I added the whole lot to the veggie stir fry…

Chicken and mushroom added to vegAnd mixed it all together. If you want to serve immediately, go ahead, adding salt and pepper to taste and maybe a little more butter. But for a Banting flare, here’s the trick….add about 2 tablespoons of creme fraiche…

Creme fraicheChase the blob of cream around the stir fry until it’s nicely blended. This should be done when everything is cooked. Then add about 100ml of fresh cream. Season with salt and pepper and serve. I used bowls…
